How many days a week does dinner time roll around and you’re hungry but don’t feel like making dinner? Well for me, it’s almost every night. Not only am I hungry, but I’m also tired and want great food fast. Oh…I should mention I’m also a college student so it’s even better if my meals are fairly inexpensive.

Shown here: Sausage & Mushroom - Red Sauce, Mozzarella & Romano Cheese, Italian Sausage and Mushrooms.

One of my new go-to dinners are Lunds and Byerly’s new take-and-bake deli pizzas. What I love about these new pizzas is that their delicious and you don’t have to dirty any extra dishes because the packages are what you use to bake the pizzas in. That makes for easy cleanup (which is extremely helpful when you have roommates who don’t do the dishes!).

If you’re like me, you enjoy eating different things day in and day out but find it taxing to always cook from scratch. My wife and I are both busy with our careers and usually don’t get a chance to prepare our weeknight meals until well after 6 or 7 p.m. We’re always looking for ways to create new meal ideas using existing finished products. I have heard this type of food preparation is called “speed scratch.”

A friend who I haven’t seen recently called a few nights ago and before I knew it, I had invited her and her husband over for dinner. Dinner … the very next night. At 34, I am just beginning to realize that I don’t ever give myself enough time to prepare for anything – I tend to say to myself, “How hard can it be?” and not until I am fully enthralled in whatever it is that I had convinced myself was not so hard, I realize that indeed, it is. Maybe not “hard” per say, but time consuming. Yes, that’s a better way to look at it.
